A new Korean street food chain is planning to open one of its first branches in Brighton.
Kimsijang is a new brand from the founder of the Japanese Wasabi chain, Dong Hyun Kim, and is due to open here and in Chinatown this winter.
It has applied for planning permission for a new shopfront in the old Leon unit in North Street, which is currently being fitted out.
In March last year, he told The Caterer his Korean street food brand, which was then set to launch in Charing Cross, would sell hot dogs, noodle soups and fried chicken.
The planning application, made to Brighton and Hove City Council, says: ” The proposed new shopfront
respects the scale, style, proportions, detailing, materials and finish of the parent building and surrounding
buildings.
“The shopfront proposal has been revised to reflect pre application advice that a “large central folding doors with fixed window panels either side may also be appropriate.”
The shopfront height is increased to create a more accessible, active and open frontage with the use of bifold and sliding doors and two fixed glazed panels to the left and right hand sides.
“This will have a positive impact on the overall appearance of this stretch of commercial frontages, without adversely affecting daylight to the residential accommodation above or detrimentally harm the existing buildings appearance.
“Opening hours will be from 12pm-8pm in the winter and from 12pm-9pm in the summer.
Mr Kim launched Wasabi in 2003, and left in 2021 when it had about 40 stores across the UK.
He now runs the Sushinoya, Ichimaru and Kimchee chains, which are mainly based in London.
