Sauce and kitsch: Kate camps it up for her fellow Brightonians

Dessert week brings new challenges for Brighton mum Kate Henry as she had to “get her wiggle on” to make the perfect melt-in-the-middle self-saucing pudding.

Chocolate and salted caramel fondants were her dessert of choice for the opening signature challenge.

The chilled centre went into the middle of the mix and it was down to timing to get it right.

“Oh not, it’s bubbling,” Kate exclaimed as the liquid centre burst out of her puddings in the oven.

“The sauce is bang on, the sponge is delicious. It’s perfectly baked,” was Paul Hollywood’s verdict.

“That is a result on a sunny beautiful day in the Bake Off tent,” Kate added.

Mary Berry’s tiramisu cake formed the technical challenge with minimal instructions.

Kate was not along when it came to wondering how to slice the thin sponge horizontally.

“It’s bit messy,” was Mary Berry’s verdict. She didn’t taste enough coffee.

After a strong showing in bread week Kate came seventh out of the nine bakers. Mary confirmed her thoughts: ” It’s a little bit messy and not very even.”

Baked Alaska was the show stopper, something straight out of the 70s.

Everything had to be made from scratch from ice cream to meringue.

“I’m making a very kitsch Alaska for my fellow Brightonians camping it up,” Kate said of her show stopper.

“Time’s okay today it’s more about getting this ice cream made and set.”

It was a hot day and bearded baker Iain threw in the towel when his ice cream was taken out of the freezer and his dessert melted.

Fortunately Kate’s pistachio, raspberry and chocolate baked Alaska looked just as she had hoped.

“The meringue is very very good, I like that fluffy texture of the Italian meringue,” said Paul.

“The sponge is good and the raspberry flavour is excellent.”

When it came to deciding star baker Kate was up there.

Mary said: “She did very well today.”

Paul pointed out she did well in the show stopper and signature but the technical challenge was not good enough.

For the second week she lost out to Richard.

It’s likely to be a battle between the two of them now.

He is the one to beat as Paul said.

“I’ve learnt never to throw my bakes in the bin,” Kate concluded after Iain was sent home.

    Shocked reading elsewhere of how that poor man came to have to bow out. A fellow constestant took his ice cream out of the freezer without his knowledge or consent and he lost freezing time and gained melting time he could not make up. That fellow contestant should be disqualified, sent down in disgrace.
